Ingredients

Preparation
- Peel and finely slice the onion, garlic and ginger.
- Cut the tomatoes into cubes.
- Sauté the onion and garlic in a little olive oil.
- Add the ginger, carrots, lentils, and tomatoes.
- Pour in the coconut milk.
- Pour in the broth, adding water if necessary to cover the mixture.
- Add the spices.
- Bring to a boil and simmer for 20 minutes, stirring occasionally.
- Cook the rice separately, according to the package instructions.
- At the end of cooking, add the lemon juice. Mix well, let it rest for a few minutes and serve with rice.
