Preparation

  1. Peel and finely slice the onion, garlic and ginger.
  2. Cut the tomatoes into cubes.
  3. Sauté the onion and garlic in a little olive oil.
  4. Add the ginger, carrots, lentils, and tomatoes.
  5. Pour in the coconut milk.
  6. Pour in the broth, adding water if necessary to cover the mixture.
  7. Add the spices.
  8. Bring to a boil and simmer for 20 minutes, stirring occasionally.
  9. Cook the rice separately, according to the package instructions.
  10. At the end of cooking, add the lemon juice. Mix well, let it rest for a few minutes and serve with rice.
