  1. Soak the dried beans for 12 to 24 hours, then cook them for about 30 minutes after boiling. Alternatively, drain the canned beans.
  2. Peel and chop the garlic and onion. Wash the bell pepper and cut it into strips. Dice or slice the carrots.
  3. Pour a drizzle of oil into a saucepan and sauté the garlic, onion, and bell pepper until the onion becomes translucent.
  4. Add the drained beans, tomatoes, and carrots.
  5. Add the spices, then season with salt and pepper.
  6. Let it simmer for 20-30 minutes. At the end of cooking, sprinkle with chopped cilantro.
  7. In parallel, cook the rice according to the package instructions.
