Preparation
- Soak the dried beans for 12 to 24 hours, then cook them for about 30 minutes after boiling. Alternatively, drain the canned beans.
- Peel and chop the garlic and onion. Wash the bell pepper and cut it into strips. Dice or slice the carrots.
- Pour a drizzle of oil into a saucepan and sauté the garlic, onion, and bell pepper until the onion becomes translucent.
- Add the drained beans, tomatoes, and carrots.
- Add the spices, then season with salt and pepper.
- Let it simmer for 20-30 minutes. At the end of cooking, sprinkle with chopped cilantro.
- In parallel, cook the rice according to the package instructions.
